You do realize, don't you, that you're using purely imaginary examples of people requesting that you use a particular set of pronouns for them to justify why you won't. I mean, can you think of a single instance in your life where someone has asked you to refer to them as a cat? I think not.

It makes perfect sense to question why pronouns are now being asked and stated everywhere - but it also makes sense to keep the tone respectful and realistic instead of just throwing a tantrum because you feel inconvenienced.
